Country Store are going to support Vegan cooking in their shop.

Their very first recipe of Vegauary.

“Tonight we're keeping it simple and putting a Vegan twist on Fajita Night! Introducing our incredibly simple Asparagus Fajitas!! All ingredients are fresh and available in store!

Serves 4!

Ingredients:
1 Large Onion
2 Red Peppers
1 Yellow Pepper
4 Spring Onions
2 Cloves of Garlic
1 or 2 Chilli's (Depending on how hot you like it!)
1 Bunch of Asparagus
Cayenne Seasoning
Chilli Powder
Salt and Pepper
Olive Oil
Guacamole
4 Tortilla Wraps
Long Grain Rice

Method:
1. Preheat oven to 220°C/Fan 200°C. Evenly slice the onions and peppers. Roughly chop the spring onions and chilies. Trim and halve the asparagus.
2. Combine all veg with oil, crushed garlic, and spices. Toss so all is coated.
3. Separate asparagus and put the remaining veg on a roasting tray. Roast for 25 minutes.
4. As the other veg is roasting fry the asparagus in a pan with a splash of olive oil until juicy green and soft.
5. Warm wraps in foil in the oven.
6. Serve ingredients with guacamole and rice.
7. Enjoy!
